Saute some chicken bits with onion, garlic, cumin, chili powder and add in some black beans, corn, green chilies and asadero cheese. Roll up in corn tortillas smother with enchilada sauce and cheese and bake for about 25 minutes in a 350 degree oven.
In full disclosure I do cheat on the side dishes. Probably gonna grab some refried beans and chips and salsa from my favorite Mexican restaurant.
