Sunday Gravy with yeah right: Time for a Knockoff – “Alice Springs Chicken”

Good morning and welcome to World Cup Final Day.

AND it’s also mid ass summer.

Yep. It got to us this week too. Even on the coast summer stuck its very unrequested dick directly into our faces this past week. Like an asshole.

This is where I’m supposed to say “Get used to it” but if you’re here and reading this particular site you have already been briefed on our ongoing death spiral into Hell with each subsequent year.

We’re going to attempt a Knockoff recipe today, or my version of a particular restaurants feature dish.

How famous is this one? Beats the shit out of me. I know you’ve all at least heard of Outback Steakhouse and I’m guessing more than a few of you have even visited one or two.

As a chain it’s pretty decent. I’ve had some good dishes there. I guess they’re most famous for their “Bloomin’ Onion.” A whole fried and “Bloomed” battered onion dish that is perfectly tasty for about the first 67 seconds right before it turns into a deep fried onion grease trap. Think about this for a second, I KNOW some sick motherfuckers get those things delivered to their house. I fucking know it.

Jesus Christ, I just gave myself the Willies and turned my stomach at the same time.

You know what’s pretty goddamn tasty at Outback? Their “Kookaburra” wings. Now I can eat those.

Let me share my quick Outback history with you.

First time I visited an Outback Steakhouse was in Tempe Arizona and it was November 12th 1995. No, I’m not some memory savant and shit, I remember it because of this.

That’s right. Me and the former Missus saw the Vikings play the Cardinals at Old Sun Devil Stadium. If you look at the bottom of that screenshot you can see why I remember this game.

The Vikings walked this fucker off in OT with a 50 yard bomb from WARREN FUCKING MOON to Qadry Ismail. Yes, Rocket’s brother. It was a fucking legendary finish. My only Vikings win via walkoff in OT that I witnessed live.

I was jazzed to the grizzy walking out of that stadium and since the missus and I were staying the night we decided to have a nice dinner to celebrate.

One of my old maxims is that if you’re unfamiliar with a city/town and are looking for a place to eat, always ask a cop or a cab driver. There was a cop directing pedestrian traffic out of the stadium right after the game so I asked him if he knew a good steakhouse nearby.

He got all excited and said “There’s this brand new Australian steak place called The Outback that my wife and I go to” then he gave us directions.

Yes this was 1995 and Outback was new to the scene. It was the first time my wife or I had heard of it so we went.

And it was good.

I’ve got to tell you that during this era of my existence I wasn’t known as being the culinary guru that I am today.

I know! It’s shocking! It’s true though. I was married with 2 daughters and our idea of fine dining was cooking at home, grabbing a Buono’s pizza or eating at the walkable fancy Mexican food place that’s like a block and a half away. So this really was a rare treat and we did indeed enjoy it.

Obviously I’ve evolved in that regard and my current idea of quality steakhouses certainly does not have Outback in its orbit.

I have no real idea how our menu today came about. I haven’t been to an Outback Steakhouse in probably 20 years but who the fuck knows. I do remember liking their Alice Springs Chicken just fine even though I usually ordered their ribs if I remember right. I took the girls to Outback fairly regularly after my divorce because it was fine and the girls liked it. Eldest right usually ordered the Alice Springs chicken too now that I think about it.

What does this all mean?

Who gives a shit?

We’re here doing this thing so…

I’ll get us going.

We start by making a honey mustard marinade and dipping sauce. They are technically the exact same fucking thing.

Gather your ingredients.

Combine them!

There’s no exact measurement today but it’s basically 2 parts dijon to 1 part mayo, a teaspoon of fresh lemon juice and a shot of honey until it’s as sweet as you prefer.

Divide this into equal parts. We’re going to marinate some plain, boring boneless skinless chicken breasts overnight in half of the honey mustard and we will save the other half for a dipping sauce when we serve the dish the next day.

Next day and…

Grab some bacon!

If it feels like you’ve been seeing the combination of bacon and mushrooms featured a lot this year, well that’s because you have.

Same again today.

Chop about 4 strips of bacon into bits.

Cook the bacon until it’s just getting crispy.

Remove the bacon to a paper towel lined plate and set aside for now.

Using the bacon grease do up the mushrooms next.

While it’s just mushrooms browning in bacon grease, I don’t know. Ain’t that a sexy goddamn photo? Shit works for me.

There are a surprising number of knock-off recipe sites out there. Some sites do nothing but.

Take a look at the home page for Top Secret Recipes.com and you’ll see what I mean.

I browsed thru 3-4 of the recipe sites to get ideas on how to make our menu today and took a suggestion here, an idea there and made it my own.

On a couple of the recipe sites I saw this next seasoning blend specifically mentioned for today’s dish.

Ever used this stuff?

It’s a Cajun/Creole thing so I’m sure it’s more prominent in the gulf states. Reddit has a whole thread about it. I usually use my own homemade version of Emeril’s Essence but I can always use another Creole mix. It’ll get used I promise.

Saw a couple of places where they swear by putting it on popcorn. Might have to try that.

Grab your marinated chicken out of the fridge and let it come up to room temperature.

Season both sides of the chicken with our new spice blend then get it into the exact same pan that we cooked the bacon and mushrooms in. No additional lube needed!

Brown for about 6-7 minutes per side.

After both sides have been browned add on the mushrooms that we pre-cooked.

Then the bacon.

You’re in charge of this hootenanny, you decide how much or how little you want.

Top with the cheese.

Bake for 15 minutes at 400 degrees.

While the chicken is baking we will make our side dish. Pasta in a parmesan cream sauce with some chives.

Melt a tablespoon of butter then add in about 10 ounces of heavy cream, half a cup of parmesan cheese (grated this time since parmigiano reggiano is still scarce around these parts) and salt and pepper to taste. Stir until it thickens.

Add chives to the sauce.

I’m cooking the last half box of farfalle pasta today. The other half was used in that link up there with the bacon mushroom pasta in it.

Add the pasta to the sauce, reserving some pasta water just in case. Stir well and add the pasta water if needed to reach the desired consistancy.

Chicken should be done. Let’s see.

Sure. That will do just fine.

Plate with the pasta and serve.

Get close in on that chicken would ya?

You can eat the FUCK out of that!

It’s chicken that’s topped with bacon, mushrooms and cheese! C’mon! The pasta is killer too. Be sure to use the leftover honey mustard to dip the chicken bites into.

I don’t even have to offer up summation here, do I?

You know what this is and how it tastes and now you know how to make it too!

There you go.

Today’s “Fun” holidays: July 19th is National Ice Cream Day AND National Daiquiri Day and I think that’s all I have to say about that.

I trust you can all observe these 2 humble occasions with aplomb.

[editors update. (Do I still have to say “editor” if the editor is me?)

Found this on Thursday. Score!]

Go on! I know you want to watch the World Cup Final. I ain’t stopping ya!

See you all next week, alright?

Until then…

Peace!

I ate at an Outback Steakhouse when I was in Seoul for my friend’s wedding. Her family was there and her brother only eats beef, white bread, and potatoes. The groom had to teach him the Korean for asking them to take all the veg off a burger at McDonalds. We went to a kickass octopus restaurant with the groom’s family and he totally missed out

I’m sure a lot of people had Ryan Fox to take the 2026 Open Championship (British Open), the fourth and final major of the PGA Tour season.
He’s the second golfer to win his first career major this season, after other household-name Aaron Rai took the PGA in May.

Rory McIlroy won his second consecutive Masters in April to complete the career grand slam. It took him almost two decades to win at Augusta, finally did in ’25. He liked it so much, he decided to makeup for lost time and win it again. He’s the first to go back-to-back since Nick Faldo did in 1989-90.
The aforementioned Rai won the PGA for his second career PGA Tour victory. He was a 200-1 longshot, the largest in at least 20 years.
Wyndham Clark somehow won his second career US Open last month, giving him two career major championships. Let’s hope the clubhouse locker rooms are insured.
And earlier today, Fox captures the claret jug for his first major at Royal Birkdale.

The 2026 major schedule is a land of contrasts.

Dodgers pitcher has given up one hit, (a HR) to the Yankees and has thrown 63 pitches with 2 outs in the 6th. Yankee announcers keep going on about what a great job he’s doing and while I’m sure he’s a fine pitcher whose mother is very proud of him, the real reason is that the current Yankees lineup couldn’t hit water if they fell out of a fucking boat.

“couldn’t hit water if they fell out of a fucking boat”

Quoting Tommy Lasorda is either meta or ironic, will check with Ms Morissette.

I thought I was quoting Bull Durham.

SonOfSpam

Maybe Ron Shelton was quoting Lasorda? No time for that now, gotta watch Madonna.

Rikki-Tikki-Deadly

This morning I lifted weights while watching the movie Kick-Ass, then tuned in for the final hole of the Open Championship. It’s been a lovely morning so far.

Just back from the gym and having a linch of leftover pizza, (heated up in the toaster over, like a goddam lady person of impeccable taste), so same. Will miss the first part of the Cup final as it’s a beautiful day here, our Canadian brethren apparently having decided to not play with matches today, so I’m gonna get the dog out into the woods.

I was a busser at Outback in my junior and senior years of high school. Of the three businesses that operated in that plaza, a massive Super K (Uber K, Above All K), a Comfort Inn, and Outback, it’s the Outback that still there 25 years later.

It was always a bit of a mind-blowing experience when a teacher ate there. Seeing Mr. Dines take down a couple of the 22oz draft beers was surreal at the time.

Gumbygirl

Gumby and I were underage drinking in a bar in Latrobe when we were in high school, and we saw the Jr. High boys gym teacher there with a lady who was not his wife. He sent a pitcher of beer over to our table, I guess hoping we’d be grateful and keep his dirty little secret. We did, not because of the beer, but because we were 17 and didn’t give a fuck about the sordid shenanigans of the grownups.

Horatio Cornblower

If you’re a public figure like a gym teacher why in God’s name would you ever take your side piece out in public?

People are so stupid.

Gumbygirl

I guess he thought because he went 10 miles from home, to a crappy shot and beer dive, nobody would know. He was lucky his own kids weren’t there, Latrobe was the undisputed underage drinking capital of western PA.

blaxabbath

I’m gonna cook at the hale here. But no Saimin Sunday Gravy?

This is why the Vikings are destined to JJ McCarthy.

blaxabbath

Feels like we’re leaving out the quality of competition variable when discussing pulling out a W against the 4-12 (5th in the East) 1995 Arizona Cardinals.

Also — and I’m not an expert — I think the full-size onion has been gone for some time. Now you get a bowl of uniform fried onion chips with that magical dipping sauce. May have been Applebee’s though. Makes sense logistically for the chain restaurant.

My tomatoes and olives are simply superior in flavor to store brought, or restaurant.
Do yourselves a favor folks, visit a local farmers market for your produce.

BrettFavresColonoscopy

But it’s so convenient to overpay at whole foods for the same poop lettuce taco bell uses!

Lots of the farms near here are big ass farms that supply the shitty, tasteless strawberries from the supermarket that we all hate. I’ve developed a special loathing for Driscolls. There are still some smaller farms that grow tasty stuff, but it’s harder to find than it should be.

Fronkenshteen

Shit. Jennifer Finch, the bass player for L7 died after a fast battle with some very aggressive brain cancer. She made this band sound very Sabbath-y with her bass lines and tones. I’d bet Dok has a ticket stub or two laying around from these lunatics.

Warren Moon vs the mighty Dave Krieg. You were living large, my man! When Krieg was the Seahawks qb in the 80’s, there was one memorable year where they won two games, then lost two games, the whole fucking season. The symmetry was fearful! I like a good chicken recipe, but I’m not a fan of Outback. That seasoning they put on steaks is an abomination before Gawd. So salty, with a gross chemical tang. Ew.

BugEyedBoo

I’ve been watching a lot of this guy’s videos lately. Some interesting, some common knowledge.

Horatio Cornblower

I’m going to watch this, but before that I’m going to guess it’s because they got off to a great start, expanded, then went public and started the cost-cutting that always comes with going public affected the quality, and not in a good way.

Gumbygirl

Sold to private equity vultures first(Bain Capital) who stripped it, then took the carcass public.

Horatio Cornblower

Just getting to that part.

Everyone associated with PE needs to be dragged out and shot.

Also, didn’t realize Outback bought out Bonefish Grill, which is why I couldn’t get their banana-chocolate pie that one time we went on vacation in Florida and the franchise was closed. Fuckers. Ruined my vacation. I’m glad they suck now.

Horatio Cornblower

The screw worm makes an appearance! Fuck you, RFK, Jr.

For a lot of chains and products, being one division out of many can be problematic, especially if the division is the cash cow. Efforts to create the Next Big Thing can distract from problems coming up the road that might/will affect the cash cow.

Personal experience, I worked for Compuserve from 1987 to 1998. We were owned by H&R Block at the time, and we were making them money hand over fist. AOL ended up taking over the pre-Internet online world because they were plowing every cent they had back into increasing membership, where HRB was putting the money in their pockets. We ended up on the wrong side of the curve, and tried to catch up with Compuserve WoW!, which wasn’t a terrible product but by then it was too late.

Another old geezer Compuserve story. Compuserve had two halves, the Information Service (CIS) and the network service. A lot of those H&R Block offices had a rack in the back with some X.25 or Frame Relay nodes. The CIS used that for dialup access, as did a lot of companies.

Compuserve went public in 1996, and it was obvious by then that AOL was going to win the information service fight. But Compuserve’s network was still very attractive; ASDL and cable broadband weren’t commonly available yet, and a lot of businesses still depended on that network. That old-timey Mastercard card reader that had to make a phone call to complete a transaction was going through a Compuserve node. So to make the whole package more attractive to buyers, the network side billed the CIS side of the house at the rate at which they billed business users. Which, okay, funny money, so what? The ‘so what’ was that expenses affected our bonuses, and that funny money billing counted as an expense on the CIS side of the house, where I worked. So about half the company was mad about money coming out of our pockets (CIS wasn’t dead just yet and we were hitting usage targets), and the other half of the company was strutting around with the attitude of, “We’re doing great, you people need to get your shit together.”

Did this scheme work? Maybe? AOL bought us out in 1998, in a three-way deal with WorldCom. AOL kept the CIS half and immediately sold the network half, plus all of their own smaller network, to WorldCom. In return, WorldCom gave AOL discount rates on bandwidth. AOL didn’t want to be in the bandwidth-as-a-commodity business anyway; $30 per month from every family in the United States was what they were shooting for.

That was pretty close to the peak of information services. Time Warner bought AOL at its high point a couple of years later, and the web came along shortly thereafter and wiped out AOL. WorldCom tried to get too big too fast and got into some trouble with financial shenanigans, and Verizon ended up with all their hardware. I got laid off when Compuserve was bought out. I made a really nice severance, but it still made me mad. I hope Steve Case’s dick falls off from some kind of incurable clap or something.

Doktor Zymm

I kinda think something similar is going on with Meta, Facebook and Insta are making all the monies that they go and blow on Metaverse and AI crap all while slowly degrading because they don’t put much effort into maintenance and just try to squeeze out more cash

Horatio Cornblower

Outback is fine, but it’s no Applebee’s.

(Outback is WAY better)

BugEyedBoo

The missus makes an Alice Springs Chicken knockoff, but something is missing. We’ll have to give marinating it a try.

Horatio Cornblower

Is it Alice?

I’ll bet it’s Alice. She doesn’t live here anymore, which is part of the problem.

BugEyedBoo

I was told you could get anything you want at her restaurant (excepting Alice).

Gumbygirl

Alice says nice things about you, like ‘ you couldn’t get it up if you slammed a door on it”

I’m pretty sure that’s a quote from the movie, but it’s been 40 years since I saw it, so don’t quote me on it!

Surprisingly good Outback item? The ribs. My mom really liked Outback, back when each of us left the house regularly we would often eat Mothers’ Day lunch or dinner (not on the actual date b/c we all hate crowds, but CLOSE) there.

Rikki-Tikki-Deadly

Rather adorably, my mother-in-law is going to the early church service so she can be here for the entire World Cup final.

Rikki-Tikki-Deadly

Highlights from that game. Not a fifty yard bomb; a fifty yard catch-and-run. YOU LIED TO ME, YEAH RIGHT!

Thanks for the recipe, alice springs goto guilt entre after housing bread and half a bloomin onion. Love Ton Chechere’s spices usually switch between that some of the Paul Prudhomme blends.

Nice one Buddy. I too am gonna try and recreate this one. My Outback go to 20 years ago was the salmon.

Beats a simple salad.

Taylor Farms doesn’t use iceberg in their bagged salads, so you can eat that one. Probably.
