A pot roast on Sunday.
I’m going to give you some pearls here so listen close.
300-320 degree oven.
Sear the flesh, chuck roast preferably, season with salt and pepper. Paprika would be nice.
Stew for 3 hours with beef stock, mire poix, garlic, a splash of red wine, a splash of balsamic vinegar, a tablespoon of tomato PASTE, 1 teaspoon of dried thyme and enough beef stock to cover.
Slow roast for three hours.
Serve over mashed potatoes.
I don’t have to tell you how to make Gravy do I?

Oh that’s going to happen for sure. I haven’t tried growing my own chili peppers yet. I have family in New Mexico that sent me a ton of dried ones I re-constitute and sick blend into a red mole type sauce and I incorporate that into the chili.
If I can chime in:
Sear as above in Grandma’s big cast iron pan, then add all that good stuff, cover with foil and let it rock in a 300 degree oven for a few hours.
Smashed taters and gravy are non-optional.
Actually, a Dutch oven might work better with all the liquid, your mileage may vary.

I was in Los Angeles, only for 30 hours, two weeks ago (or else I’d have emailed balls or someone to hang out). I’m a veteran of three different arthroscopes. Doc said in 2003 I had the knee of a 55-year-old (I was 21). Got a cortisone shot on Tuesday, and an MRI scheduled in a couple of weeks. New doc seems convinced it’s more meniscus tears. He’s probably right.
Have they talked about the lube yet? My Ortho surgeon called it WD-40. For us folks with no meniscus left.
Quick injection under the kneecap. Quick but motherfucker stings. Repeat bi-annually until crippled or dead I guess.
It was brought up. Said we’ll discuss things after the MRI.
I have no problem with any method they want to try. It all helps. I just can’t be off my feet anymore, not with two kids. Wifey goes back to work a week before Christmas, and I work from home. But, that entails I can move.
